I was out of town visiting my new nephew (who is the absolute cutest thing ever by the way) and I get a video message from T. The message was:
"Your mission, should you choose to accept, is KETO FRIES"
Mission Accepted!!!
My choice of potato substitute: Jicama. I bought this pre-cut jicama at Trader Joes.

I cut the pre-cut pieces in 1/2 so that they would cook faster but you can leave them as is if you prefer thicker fries. (cooking time would increase)
I tested out 4 different keto fries recipes: plain, Pork Panko (ground pork rinds), with Nut Crumbs, and with almond flour.
All four recipes were a hit! Woohoo!
The plain gives you the highest ratio (1.36:1) and the Pork Panko coated were the ones my "regular" eaters voted as most like the "real thing".
The What:

Plain Jicama Fries:
26g Jicama (cut into "fries)
2g Baking Powder
2g Avocado Oil
Total Calories: 30
Ratio: 1.36:1

Pork Panko Coated Fries:
26g Jicama (cut into "fries")
.5g Baking Powder
Total Calories: 38
Ratio: .5:1

Nut Crumb Coated Fries:
26g Jicama (cut into "fries")
.5g Baking Powder
5g Nut Crumbs
Total Calories: 38
Ratio: .75:1

Almond Flour Coated Fries:
26g Jicama (cut into "fries")
.5g Baking Powder
5g Almond Flour
Total Calories: 40
Ratio: 1.08:1
The How To:
Place jicama, and desired coating in a ziplock bag
Shake to coat
Bake in air-fryer (I have this one) at 400 for 10-12min, pulling them out to shake 1/2 way through
Serve with mayo or other added fat to reach desired ratio

Notes:
If you don't have an air-fryer these can be baked in the oven at 450 for 10-15min, they'll still be good but not have that "fried" crunch factor.
To make a bigger batch just multiply all ingredients by desired quantity: (ie: 5 servings - 130g Jicama, 2.5g baking powder, 125g desired coating, calories would increase by x5 and ratio would remain the same)
